When I hosted a dinner party with friends, in addition to my Creamy Avocado Spaghetti Squash, I also made my stuffed bell peppers recipe. Super healthy, super tasty, you'll look like a pro in the kitchen! I was running out of time because I was cooking three dishes at once, so I didn't add quinoa/rice (as I normally would've) to the veggie stir fry that is stuffed inside each pepper. But I recommend doing so if you need to add some extra oomf and protein to the dish! The stuffed bell peppers recipe with tahini sauce stir fry is easy and fun to make. Like usual, simple ingredients, simple instructions. Here's what you do... 

INGREDIENTS for Stuffed Bell Peppers Recipe:

  • 2 Green/Red/Yellow Bell Pepper (choose whichever colors you prefer and how ever many you'd like to make!)
  • 1 Cup Chopped Onion
  • 1 Cup Chopped Tomato
  • 2 Cups Chopped Eggplant
  • 2 Garlic Cloves
  • 1 Teaspoon Himalayan Sea Salt
  • 2 Teaspoon Crushed Black Pepper
  • 2 Tablespoons (or so) Olive Oil

For the Tahini sauce/dressing:

  • 1 Tablespooon Tahini
  • 3 Tablespoons (or so) Olive Oil
  • 1 Tablespoon Water
  • 1/4 Lemon
  • 1 Teaspoon Himalayan Sea Salt
  • 1 Teaspoon Crushed Black Pepper


DIRECTIONS for Stuffed Bell Peppers Recipe:
(Prep Time 15 minutes + Cook Time 30 minutes)

1. Heat oven to 400 degrees Fahrenheit
2. Cut tops and insides out of each pepper

4. Place pepper face down in oven on baking pan for 20 minutes
5. While peppers cook, chop all the other veggies

7. If I had cooked quinoa/rice, this is when I would add it to the stir fry
8. Mix all ingredients for tahini sauce together in a cup
9. Add sauce to stir fry
10. Cook for another 5 minutes

12. Place stuffed bell peppers back in oven for about 5 minutes
13. Garnish with some more sea salt, pepper, and parsley if you're into that.
14. Dig in!
