I had friends over for dinner last week to make a few dishes for them, including this creamy avocado spaghetti squash recipe, and I immediately regretted having them over. It was too good to share! (I joke.) Such a fulfilling, healthy, nourishing dish that everyone will love unless they hate food! Simple ingredients, simple instructions. So let's get started. INGREDIENTS for Creamy Avocado Spaghetti Squash Recipe (serves 6):

  • 1 Spaghetti Squash (I always search for the biggest one in the store and look for the color to be a mix of colorful yellow and a bit white)
  • 1 Avocado (I made sure I got the biggest, ripest one I could find)
  • 2 Tomatoes
  • 3 Basil Leaves
  • 2 Garlic Cloves
  • 1/2 Lemon
  • 1/4 Jalapeño
  • 2 Teaspoon Himalayan Sea Salt
  • 2 Teaspoon Crushed Black Pepper
  • 1/4 Cup (or so) Olive Oil
  • 2 Tablespoons Water

DIRECTIONS for Creamy Avocado Spaghetti Squash Recipe:
(Prep Time 15 minutes + 45 minutes total to cook)

1. Heat oven to 425 degrees Fahrenheit
2. Place the whole spaghetti squash in the oven on a baking pan and heat for 5 minutes
3. When the squash is hot, remove from oven and cut into halves, longways (hold with an oven towel and be careful!); heating it makes it easier to cut

8. After 40 minutes or when you can press and indent the skin of the squash, remove both halves from the oven (often the outer skin also turns a bit brown when it's ready)
9. Carefully, because the spaghetti squash will be very hot, use a fork to scoop the insides into a large bowl

Place all the creamy avocado sauce ingredients into a high-speed blender: 1 avocado, a little less than 1/4 cup olive oil, 2 tablespoons water (kinda just eyed this), 2 garlic cloves, 1/4 jalapeño pepper, basil, sea salt & pepper
11. Blend until smooth
12. Mix the creamy avocado sauce into the spaghetti squash
